The idea here is to pay homage to our wonderful neighbors to the south.  The fall of the Aztec Empire and capture of its ruler left Spanish conquistadors in charge of a vast and largely unfamiliar land. Carlos V, labeled it  Nueva Espaņa (New Spain)...and Mexican food was officially born.  I pay tribute to this wonderful food by making available of some of the best recipes on the net for you Mex heads.  Enjoy.
